Your counters are buried in tomatoes and peppers right now. Before you can, dehydrate, or oil-pack any of it, there are three mistakes that ruin a season's harvest — and they're all avoidable in under five minutes of prep per batch.

Why Tomatoes Aren't as Acidic as You Think

Tomatoes are technically "borderline" acid, not high-acid. Depending on variety and ripeness, pH can climb above the safe 4.6 threshold — which means canning without added acid isn't optional, it's a botulism risk (Clostridium botulinum thrives in exactly this kind of low-oxygen, low-acid environment).

Pro tip: Peel first — 30-60 seconds in boiling water, then straight into an ice bath. Skins slip right off. A wide-mouth funnel and jar lifter set makes this step almost mess-free.

The Acidification Cheat Sheet

Jar Size Bottled Lemon Juice Citric Acid 5% Vinegar

Grab citric acid or bottled lemon juice — never fresh-squeezed, since bottled is pH-standardized.

Three non-negotiables:

  • Peppers are always low-acid. Sweet or hot, they need a pressure canner or a vinegar pickle brine. Never water-bath plain peppers.
  • Salsa = tomatoes + peppers. Use only NCHFP-tested recipes, pints only (no tested quart guidelines exist), and skip flour/cornstarch thickeners — use tomato paste or drained tomatoes instead.
  • Frost-killed vines = compost, not cans. Their acidity drops to unsafe levels.

Dehydrating & Freeze-Drying: Shrink the Harvest, Not the Flavor

  • Tomatoes: 135-145°F
  • Peppers: max 140°F (higher cooks them and kills the flavor)

Freeze-drying tomatoes? Dice in a food processor for even pieces, pre-freeze trays 24 hours, and add 12 extra hours to your Additional Dry Time — tomato seeds trap moisture that ruins a batch if you rush it.

Watch for case hardening: if the outside dries fast while the inside stays wet, you get a shell that traps moisture in — and mold follows. Done tomatoes feel leathery and flexible; done peppers snap, don't bend.

The Step Everyone Skips: Conditioning

Dry doesn't mean done. Hidden moisture pockets can still sweat out and mold your jars.

  1. Fill a jar 2/3 full with cooled, dried pieces
  2. Shake daily for 7-10 days
  3. See fogging on the glass? Back in the dehydrator it goes

The One Rule That Trumps Everything: Oil + Vegetables = Danger

Sun-dried tomatoes and roasted peppers in olive oil taste incredible and are genuinely risky. Oil creates an oxygen-free environment — exactly what botulism needs.

  • Never store whole, skin-on tomatoes in oil — skins trap bacteria against the flesh even when the tomato looks dry
  • Oil-packed anything is refrigerator-only, and only good for 4 days to 2 weeks, full stop

Start Small This Week

One tray of cherry tomatoes. One batch of tested salsa. That's it.
